Bring big flavour, fresh herbs and a little sizzle to your evening. In this 3-hour adult Lebanese cookery class in Bristol, you’ll learn the foundations of a Lebanese mezze spread, with plenty of hands-on prep, seasoning and technique.
We’ll guide you through the key skills that make Lebanese food sing: Building flavour with lemon, garlic, tahini and spices. Getting falafel mixture just right (and shaping/frying for a crisp finish). Smooth, properly emulsified hummus. Flatbreads cooked fresh and served warm. How to balance a mezze table: creamy, crunchy, tangy and herby.
What you’ll make
On the day you’ll make a mezze feast, typically including: Classic hummus with tahini, lemon and garlic, Falafel with herbs and warm spices, Fresh flatbreads (made and cooked during class), Simple sides and finishing touches to round out the table (seasonal salad, pickles, dips and garnishes depending on the day)
At the end, you’ll sit down and eat together Cooking It style, with your homemade mezze spread on the table.

Paul started his work in kitchens washing dishes as a 15 year old, and soon grew to love the hustle and bustle of this industry. He’s now worked as a professional chef for 24 years in kitchens all over the UK, as well as the U.A.E and Netherlands. As well as sharing his love for food at Cooking It, Mark also works at the National Chef Academy as Vice Principal, combining his passion for food and teaching with enthusiastic apprentice chefs.
