Fermentation Feast & Workshop at Urban Vineyard

Immerse yourself in the fascinating world of fermentation at our urban vineyard in Montpelier! Join James Bayliss-Smith, founder of Nania's Wildbrew Kombucha, and a special guest fermentation expert for an afternoon of bubbling brews and sourdough delights.

Your 5-hour fermentation journey includes:

  • Welcome drink of a kombucha tasting flight to awaken your palate.
  • A guided tour of our unique allotment vineyard and kombucha micro-brewery in the heart of Montpelier.
  • Hands-on kombucha brewing workshop where you'll master authentic techniques, learn about continuous vs batch brewing, and discover the art of properly brewing tea
  • You'll take home your very own SCOBY mother culture to continue brewing kombucha in your kitchen!
  • Sourdough pizza making masterclass - You'll learn James's workflow for creating restaurant-quality pizza in your home oven and you will feast on fresh pizzas baked in the cob oven while enjoying wines made from the allotment grapes.
  • A special fermentation demonstration from a guest expert (choose from kefir, hot sauce or lacto-ferments).

After dinner there will be a special fermentation demonstration with our guest expert of the day. This demonstration will change depending on the date selected below:

Saturday 7th June, 3pm-8pm - KEFIR SPECIAL Learn all about kefir with Dr. Caroline Gilmartin from Every Good Thing (@every.good.thing) who will demonstrate how easy it is to make this probiotic-rich ferment at home.

Saturday 21st June, 3pm-8pm - HOT SAUCE SPECIAL Spice things up with Rikki from Easton Chilli (@eastonchilli) who will reveal the secrets to creating perfect fermented hot sauces.

Saturday 28th June, 3pm-8pm - LACTO-FERMENTATION SPECIAL Discover the art of kimchi, sauerkraut and other lacto-ferments with Matt (Muti) from Eat Muti (@eatmuti).

Leave with your own kombucha SCOBY, sourdough starter, new fermentation skills, and join our optional WhatsApp group to share your fermenting journey with fellow enthusiasts!

  • St Andrews Road has on-street parking, free on Saturdays but your host recommends arriving at the site on foot, bike or via public transport as parking is limited
  • Please wear comfortable outdoor shoes and dress appropriately for the weather. We will be in the hosts house if the weather is terrible
  • There are toilets for participants to use in the hosts house

Nania's Wildbrew is a drinks company born out of a passion for fermented drinks. Founded in 2020, our Bristol-based craft kombucha brewery has developed a unique approach to kombucha production that sets us apart in the city.
Our micro-brewery, situated on our allotment vineyard in Montpelier, produces award-winning authentic kombuchas that are barrel-fermented for exceptional depth of flavour. Using a proprietary brewing method, we create small-batch kombucha that's can-conditioned and available locally in Bristol and online.
We source our green tea blend from the Rare Tea Company, ensuring sustainable and ethical sourcing. James owns and runs Nania's Vineyard - originally inspired by the 50 year old grape vine that can be found in his garden. James is a professional documentary cameraman, a role that has seen him travel the world. Beyond exploring wild landscapes and checking out cool places, James enjoys adventure sports.
