This experience is part of City Uncovered: Brighton, taking place from 1st–14th June 2026 — a limited-time series of unique, under-the-radar experiences designed to help you see the city differently.
Led by an experienced foraging guide, this immersive countryside experience combines a guided forage walk with a relaxed seasonal lunch inspired by the landscape around you. As you wander through Sussex’s hidden natural spaces, you’ll learn how to identify wild edible ingredients growing in hedgerows, woodland and coastal paths — from herbs and flowers to leaves, berries and overlooked native plants.
Along the route, your host will share fascinating insight into seasonal ecosystems, sustainable harvesting and the history of foraging traditions connected to the local landscape. You’ll begin to notice the abundance hidden in plain sight while learning how wild ingredients can be used in everyday cooking.
After the walk, you’ll sit down together to enjoy a thoughtfully prepared lunch celebrating fresh seasonal flavours and the connection between food, nature and place. Relaxed, sociable and rooted in the surrounding landscape, the meal offers a chance to reflect on the experience while enjoying the atmosphere of the Sussex countryside.

This was SUCH a rich experience! Christian really has his heart and soul in this work, sharing with us a plethora of knowlege and helping us connect deeper with the nature that surround us, bringing so much awareness and wonderful experiences. His incredible cooking was a wonder to behold and what value it is to be cooked for by a world class chef in his natural environment! I applaud the fact that it was all vegan cooking too 👌👏💚 Can’t wait to go back for more adventures and wonder!
