Forage fragrant elderflowers from Brighton’s hidden green spaces and learn how to turn them into homemade cordial and sparkling elderflower champagne.
This experience is part of City Uncovered: Brighton, taking place from 1st–14th June 2026 — a limited-time series of unique, under-the-radar experiences designed to help you see the city differently.
Join the team at Urban Forage for an early summer evening exploring the overlooked flavours growing wild around the city. Guided by Christian, you’ll head out on a relaxed seasonal walk to discover how to identify and responsibly harvest elderflowers at their peak.
Along the way, you’ll learn about the folklore, history and hidden culinary uses of this iconic seasonal plant while tuning into the rhythms of the landscape around you. Back at the workshop space, you’ll transform your freshly gathered elderflowers into homemade cordial and naturally sparkling elderflower champagne, learning the full process from branch to bottle.
As you create your own take-home bottles, you’ll also enjoy refreshing elderflower and nettle iced tea and discover creative ways to use elderflower in drinks, desserts and seasonal recipes throughout the summer.
Expect floral aromas, hidden hedgerows and a completely different way to experience Brighton’s wild side.
