Then it’s time to roll your sleeves up and get to work making your own sausage mix, with the guidance of one of Ruby & White’s expert butchers. You’ll have a variety of herbs, spices and ingredients to pick, from traditional flavours to something experimental and unique. Once you’ve perfected your sausage mix, you’ll learn to fill and tie the sausages yourself, before taking home a very generous pack for supper.

Groups will be limited to 2 - 3 people to maintain social distancing. All food preparation areas will be sanitised and clean aprons provided.
Ruby & White is a Bristol butchers and food hall on Whiteladies Road. Their shop has a wide range of meats, charcuterie, cheeses, wines and beer, as well as delivering the best in local meat and produce to individuals and retailers across Bristol. You’ll find their shelves bursting with locally grown vegetables, eggs, fresh crusty bread, condiments and pantry items, condensing the best of a countryside farm shop. The Ruby & White team love inviting customers in for their hands on experiences in sausage making and butchery with their expert team.
Morgan is one of Ruby & White’s passionate butchers, making all of their much-loved sausages each week. His specialty is experimental flavours, colours and exciting combinations, lots of which he’ll share during your experience. As well as being passionate about all things butchery, Morgan enjoys the outdoors, meeting fellow food enthusiasts and sharing his butchery skills.
Rob is the butchery manager at Ruby & White and has many years of experience butchering prime cuts and creating incredible flavours. He loves sharing his craftsmanship and is a foodie at heart, always on hand with a great recipe and the best wine to accompany it.
I booked a class for myself and husband as part of an anniversary weekend getaway. 2 other guys also attended the class.
It was really great fun, experimenting with flavours and getting hands on with the meat & all the different herbs, spices and veggies that you could add to it.
Our host was really informative and I found the small class of 4 made it really chilled and fun and it's something I'd love to do again. It's just a shame that Ruby & White is a 2 hour drive from where we live!
A really great afternoon with the team at R&W, we cooked our sausages today and they were delicious!
Had a great couple of hours experimenting with sausage flavours in a lovely location. Not sure my leek, red onion and apple was the flavour of the day but it taught me not to worry about experimenting!
I'd recommend the course to anyone wanting to broaden their culinary skills!
