Switching to a plant-based diet can seem a bit overwhelming at first. Figuring out what you need to stock up on to create nutritious meals, or how to make the basics without relying on shop-bought substitutes.

In this experience, find out what you need to stock in your cupboards to whip up quick, easy and wholesome vegan meals. Your host will neatly break down how to make everything. They will guide you through good quality vegan produce to buy for making basics such as cheeses, egg-free batters, mayonnaise and marinades.

Discover how easy it is to replace eggs with either aqua faba, flaxseeds or chickpea flour. You will work with all the delicious milk and yoghurt alternatives to make a simple vegan cheese from cashews.

Recipes will vary through the seasons but expect to make dishes such as:

  • Vegetable tarts
  • Tomato, pepper and bean casserole
  • Mushroom stroganoff
  • Quinoa salad with tofu chips
  • Cashew cheese
  • Tofu scramble
  • Vegan shepherd's pie
  • Chocolate brownies
  • Vegetable tajine with apricot quinoa
  • Spinach, sweet potato and lentil dhal

You will finish by sampling all the delightful dishes you have made while brushing up on some final vegan tips. Our mouth is watering just at the thought...

About Cooking It

Cooking It is a busy cookery school in the heart of Cotham. It was founded by Monica, who loves being in the kitchen, feeding friends and family and seeing the pleasure that sharing food can bring. Growing up in Barcelona, Monica’s passion for cooking started early and she still loves making the tapas dishes that she learnt as a girl. At Cooking it they love making food and entertaining people, and with so many cooking experiences to choose from there’s something for everyone to enjoy. They welcome people of all ages and always aim to create a fun atmosphere to cook in, where you can enjoy food with friends or family and discover more about delicious recipes.

Paul Mannering

Paul started his work in kitchens washing dishes as a 15 year old, and soon grew to love the hustle and bustle of this industry. He’s now worked as a professional chef for 24 years in kitchens all over the UK, as well as the U.A.E and Netherlands. As well as sharing his love for food at Cooking It, Mark also works at the National Chef Academy as Vice Principal, combining his passion for food and teaching with enthusiastic apprentice chefs. As a chef he’s willing to try anything and is always on the lookout for unique flavour combinations.
